Ok, This isn't the lowest in fat, but it's simple, rich in flavor, and fairly healthy. I made it tonight:
Chicken Cacciatore
2 tablespoons olive oil 4 chicken breasts 1/4 onion, diced 1 carrot, diced 1 celery rib, diced 1/4 cup merlot 1 can diced tomatoes 1 bay leaf Salt & pepper to taste
In a dutch oven, heat oil over medium heat. Brown chicken breasts in hot oil, remove from pot and set aside. Saute onion, carrot, and celery in oil. Deglaze with merlot and simmer for 2 minutes to burn off the alcohol. Add chicken breasts, tomatoes, bay leaf, salt, & pepper. Cover with lid and simmer until chicken breasts are tender. Serve over brown rice or whole wheat pasta.
